    Ingredients:

    •  1 large yam (about pound size)
    • 1 cup all-purpose flour (you can try local wheat flour too!)
    •  1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon ground nutmeg (freshly grated smells amazing!)
    •  1/4 teaspoon ground cinnamon (think of the delicious aroma!)
    • 1/4 teaspoon salt
    •  1 cup milk (dairy or plant-based, your choice!)
    •  1 egg
    •  1 tablespoon melted palm oil or vegetable oil
    • 1/2 cup honey (local honey is the best!)
    • Spiced Honey Syrup (a yummy twist!)
    • 1/4 teaspoon ground ginger (a little goes a long way!)
    • Pinch of ground cloves (just a pinch for a warm kick!)

     

    Instructions:

    Get the Yam Ready:
    Cut the yam, wash it thoroughly and poke it a few times with a fork. This allows the next stage to be much easier.

    Place the whole yam on a baking tray and bake for about 45 minutes to 1 hour or until nice and soft. You can check for doneness by inserting a knife – it should slide in easily.

    Whisk Away the Dry Stuff:

    Grab a large bowl and whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt.

    Mash Time!

    While your yam bakes, get ready for the wet ingredients. Peel the cooked yam and mash it up with a fork or handy mortar and pestle (if you have one!) until smooth. Don’t worry if there are a few small chunks, that adds a nice texture.

    Mix it Up:

    In another bowl, combine the milk, egg, and melted oil with your mashed yam. Gently fold this wet mixture into the dry ingredients until just combined. Remember, don’t overmix – a little lumpiness is okay!
